Whip up this moist, flavorful zucchini bread with simple ingredients for a delicious treat.


Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine grated zucchini, sugar, oil, eggs, and vanilla until well mixed.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
