Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- Zest of 1 lemon
- 1 cup mixed berries (blueberries, raspberries, or strawberries)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, vegetable oil, egg, and lemon zest.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the berries.
- Divide the batter among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
Be careful not to overmix the batter to ensure fluffy muffins. Fresh berries are recommended for the best flavor.
