Description

A heartwarming classic featuring tender beef in a creamy sauce served over thick egg noodles, perfect for cozy gatherings.


Ingredients

  • 2 lbs chuck roast or stew meat, cubed
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups water
  • 2 tablespoons beef bouillon base
  • 1 cup sour cream
  • 2 tablespoons flour
  • 2 tablespoons tomato paste
  • 1 package egg noodles
  • Season-all, kosher salt, and pepper to taste


Instructions

  1. Pat the meat dry and season with season-all, salt, and pepper.
  2. Heat olive oil in a Dutch oven and sear the meat in batches until browned.
  3. Sauté diced onions and minced garlic in the remaining oil until soft.
  4. Add water and beef bouillon to deglaze the pot, scraping the bottom for flavor.
  5. Return the seared beef to the pot, bring to a boil, then simmer for 2 hours.
  6. Cook egg noodles according to package instructions until al dente.
  7. Whisk together sour cream, flour, tomato paste, and some hot broth in a bowl.
  8. Combine the sour cream mixture back into the pot with the beef, simmer for 5 minutes.
  9. Stir in the cooked egg noodles and serve.

Notes

For added flavor, consider adding sautéed mushrooms or using fresh herbs.
