A heartwarming classic featuring tender beef in a creamy sauce served over thick egg noodles, perfect for cozy gatherings.
Ingredients
- 2 lbs chuck roast or stew meat, cubed
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 2 cloves garlic, minced
- 4 cups water
- 2 tablespoons beef bouillon base
- 1 cup sour cream
- 2 tablespoons flour
- 2 tablespoons tomato paste
- 1 package egg noodles
- Season-all, kosher salt, and pepper to taste
Instructions
- Pat the meat dry and season with season-all, salt, and pepper.
- Heat olive oil in a Dutch oven and sear the meat in batches until browned.
- Sauté diced onions and minced garlic in the remaining oil until soft.
- Add water and beef bouillon to deglaze the pot, scraping the bottom for flavor.
- Return the seared beef to the pot, bring to a boil, then simmer for 2 hours.
- Cook egg noodles according to package instructions until al dente.
- Whisk together sour cream, flour, tomato paste, and some hot broth in a bowl.
- Combine the sour cream mixture back into the pot with the beef, simmer for 5 minutes.
- Stir in the cooked egg noodles and serve.
Notes
For added flavor, consider adding sautéed mushrooms or using fresh herbs.
