Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 4 ounces cream cheese, softened


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and baking soda.
  3. In another bowl, mix the melted butter, eggs, buttermilk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. In a small bowl, mix the softened cream cheese until smooth.
  7. Fill each muffin cup 1/3 full with batter, add a teaspoon of cream cheese, and then top with more batter until 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.
