Description

A delicious one-pan dish featuring chicken, creamy orzo, and Tuscan flavors that’s easy to make and perfect for any night.


Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large skillet, heat a generous splash of olive oil over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.
  2. Add minced garlic and sun-dried tomatoes to the same skillet and sauté for 1-2 minutes.
  3. Pour in the chicken broth and bring to a simmer. Add orzo and cook for about 10 minutes until tender.
  4. Reduce heat and stir in heavy cream and Parmesan cheese until smooth.
  5. Add spinach and return chicken to the skillet. Cook until spinach wilts and everything is well combined. Adjust seasoning as necessary.
  6. Serve warm, directly from the skillet or plated.

Notes

Serve with a salad or a cozy glass of wine. This dish can be made ahead of time and reheated.
