A delicious one-pan dish featuring chicken, creamy orzo, and Tuscan flavors that’s easy to make and perfect for any night.
Ingredients
- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- In a large skillet, heat a generous splash of olive oil over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.
- Add minced garlic and sun-dried tomatoes to the same skillet and sauté for 1-2 minutes.
- Pour in the chicken broth and bring to a simmer. Add orzo and cook for about 10 minutes until tender.
- Reduce heat and stir in heavy cream and Parmesan cheese until smooth.
- Add spinach and return chicken to the skillet. Cook until spinach wilts and everything is well combined. Adjust seasoning as necessary.
- Serve warm, directly from the skillet or plated.
Notes
Serve with a salad or a cozy glass of wine. This dish can be made ahead of time and reheated.
