A flavorful and easy-to-make Taco Rice Bowl, perfect for weeknight dinners or meal prep, combining Mexican flavors with comfort food.

Ingredients

  • 1 cup long-grain white rice
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes

  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package directions until fluffy.
  2. In a large skillet, heat olive oil over medium heat and add ground beef. Cook until browned, breaking apart as it cooks.
  3. Season beef with taco seasoning and a splash of water, simmer until flavorful.
  4. Scoop rice into serving bowls, top with taco beef, and sprinkle with cheddar cheese to melt.
  5. Add lettuce, tomatoes, salsa, and a dollop of sour cream on top.
  6. Serve immediately, allowing customization with extra toppings if desired.

Notes

Consider using chicken or turkey for leaner options, or mix in black beans for added texture.
