Description
A colorful and comforting taco bowl featuring roasted sweet potatoes, seasoned ground meat, and topped with pico de gallo and guacamole.
Ingredients
- 4 cups Sweet Potatoes (Cubed)
- 2 tablespoons Olive Oil
- 1 teaspoon Smoked Paprika
- to taste Salt
- to taste Pepper
- 1 pound Ground Beef (or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning
- 1 cup Pico de Gallo
- 1 cup Guacamole
- 1/2 cup Sour Cream
- to taste Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet lined with parchment paper.
- Roast in the oven for about 25-30 minutes, flipping halfway through.
- While potatoes roast, cook meat in a skillet over medium heat until browned; add taco seasoning.
- Mix in taco seasoning and let simmer for 1-2 minutes.
- Assemble bowls starting with roasted sweet potatoes, topping with seasoned meat, pico de gallo, guacamole, and sour cream.
- Add any extra toppings as desired.
