Description

A simple and delicious crock pot chicken dish infused with sweet pineapple and savory soy sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup diced pineapple
  • 1/4 cup green onions, sliced


Instructions

  1. In a bowl, mix together the pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  2. Place the chicken breasts in the slow cooker and pour the pineapple mixture over them.
  3. Add the diced pineapple on top of the chicken.
  4. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.
  5. Shred the chicken with two forks and stir to coat in the sauce.
  6. Serve over rice and garnish with green onions.

Notes

Avoid using canned pineapple juice for the best flavor; fresh juice is preferred.
