Description
A simple and delicious crock pot chicken dish infused with sweet pineapple and savory soy sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 cup diced pineapple
- 1/4 cup green onions, sliced
Instructions
- In a bowl, mix together the pineapple juice, soy sauce, brown sugar, garlic, and ginger.
- Place the chicken breasts in the slow cooker and pour the pineapple mixture over them.
- Add the diced pineapple on top of the chicken.
- Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.
- Shred the chicken with two forks and stir to coat in the sauce.
- Serve over rice and garnish with green onions.
Notes
Avoid using canned pineapple juice for the best flavor; fresh juice is preferred.
