Description

A healthy low-carb dinner featuring juicy chicken breasts filled with a creamy spinach and cheese mixture.


Ingredients

  • 2 large chicken breasts
  • 2 cups fresh spinach
  • 1 cup cream cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Italian herbs or red pepper flakes


Instructions

  1. Preheat the oven to 375°F.
  2. Wash and chop the spinach into manageable pieces.
  3. Sauté the spinach and garlic in olive oil over medium heat for 2-3 minutes until the spinach wilts.
  4. In a bowl, mix the sautéed spinach and garlic with cream cheese and half of the mozzarella, adding salt and pepper to taste.
  5. Slice a pocket into the side of each chicken breast and stuff with the spinach mixture.
  6. Put the stuffed chicken breasts in a baking dish and sprinkle the remaining mozzarella on top.
  7. Bake for 25-30 minutes until golden and bubbly.
  8. Let it rest for 5 minutes before serving.

Notes

Avoid overstuffing the chicken and remember to preheat the oven for best results.
