Description

A simple yet delicious taco casserole made in a slow cooker, perfect for meal prep with minimal effort.


Ingredients

  • 1 lb lean ground beef (80/20)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup chopped bell peppers (mix of colors)


Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain the excess fat.
  2. Stir in the taco seasoning and cook for one additional minute.
  3. Transfer the beef to a slow cooker. Add in the black beans, corn, diced tomatoes, and bell peppers. Mix well.
  4. Cover and cook on low for 240 minutes (4 hours) or high for 120 minutes (2 hours).
  5. About 15 minutes before serving, sprinkle the cheese on top and cover until melted.
  6. Serve hot with desired toppings, like sour cream and cilantro.
