A cozy, one-pot meal featuring tender chicken infused with lemon and herbs, paired with fluffy rice, all cooked effortlessly in a slow cooker.
Ingredients
- 2 pounds chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley
Instructions
- Prepare your ingredients.
- Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes until softened, then add garlic and cook for 1-2 minutes.
- Transfer the onion and garlic to the slow cooker, placing chicken breasts on top and seasoning with herbs and spices.
- Add uncooked rice around the chicken, pour chicken broth over it, and drizzle lemon juice on top.
- Cover and cook on low for 3-4 hours or on high for 1.5-2 hours.
- Remove chicken, stir in peas, shred chicken and combine with the rice mixture.
- Garnish with parsley before serving.
Notes
For best results, ensure the rice is well submerged in broth during cooking. Adjust seasoning to taste before serving.
