Description

A cozy, one-pot meal featuring tender chicken infused with lemon and herbs, paired with fluffy rice, all cooked effortlessly in a slow cooker.


Ingredients

  • 2 pounds chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Prepare your ingredients.
  2. Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes until softened, then add garlic and cook for 1-2 minutes.
  3. Transfer the onion and garlic to the slow cooker, placing chicken breasts on top and seasoning with herbs and spices.
  4. Add uncooked rice around the chicken, pour chicken broth over it, and drizzle lemon juice on top.
  5. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours.
  6. Remove chicken, stir in peas, shred chicken and combine with the rice mixture.
  7. Garnish with parsley before serving.

Notes

For best results, ensure the rice is well submerged in broth during cooking. Adjust seasoning to taste before serving.
