Description

A simple and delicious slow cooker recipe featuring tender chicken breasts cooked in a sweet and savory honey garlic sauce, perfect for a hassle-free dinner.


Ingredients

  • 2 lbs chicken breasts
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 1 cup honey
  • ½ cup soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked rice for serving


Instructions

  1. Grease the inside of your slow cooker with cooking spray or olive oil.
  2. In a mixing bowl, whisk together honey, soy sauce, minced garlic, ground ginger, and sesame oil.
  3. Arrange chicken breasts in a single layer inside the slow cooker.
  4. Layer the sliced carrots and bell peppers over the chicken.
  5. Pour honey garlic sauce evenly over the chicken and vegetables.
  6. Add salt and pepper to taste.
  7. Cover and cook on high for 4 hours or low for 6 to 8 hours.
  8. Once cooked, shred the chicken in the pot and stir well.
  9. Spoon over cooked rice and garnish with chopped green onions.

Ensure the slow cooker is greased to prevent sticking and consider using thawed chicken for best results.
