Ingredients
- 2 lbs chicken breasts
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 cup honey
- ½ cup soy sauce
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
- Cooked rice for serving
Instructions
- Grease the inside of your slow cooker with cooking spray or olive oil.
- In a mixing bowl, whisk together honey, soy sauce, minced garlic, ground ginger, and sesame oil.
- Arrange chicken breasts in a single layer inside the slow cooker.
- Layer the sliced carrots and bell peppers over the chicken.
- Pour honey garlic sauce evenly over the chicken and vegetables.
- Add salt and pepper to taste.
- Cover and cook on high for 4 hours or low for 6 to 8 hours.
- Once cooked, shred the chicken in the pot and stir well.
- Spoon over cooked rice and garnish with chopped green onions.
