Ingredients
- ½ cup reduced sodium soy sauce
- ½ cup honey
- ¼ cup ketchup
- 2 cloves minced garlic
- 1 teaspoon dried basil
- ½ teaspoon oregano
- ¼ teaspoon crushed red pepper flakes
- ¼ teaspoon ground black pepper
- 8 bone-in, skin-on chicken thighs
- 16 ounces halved baby red potatoes
- 16 ounces baby carrots
- 16 ounces trimmed green beans
- Fresh parsley for garnish
Instructions
- Prepare the sauce by whisking together soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and black pepper in a large bowl.
- Layer the chicken thighs, baby red potatoes, and baby carrots in the slow cooker.
- Pour the sauce over the chicken and veggies, gently tossing to coat.
- Cover the slow cooker and set to Low for 7-8 hours or High for 3-4 hours.
- In the last 30 minutes of cooking, add the trimmed green beans.
- For crispy chicken skin, broil the cooked thighs in the oven for 3-4 minutes.
- Serve the chicken with veggies and spoon the sauce over, garnishing with fresh parsley.
Notes
For a richer flavor, consider marinating the chicken in the sauce for a few hours before slow cooking. Optionally, add diced jalapeños for extra spice.
