Description

A heartwarming meal of tender chicken thighs in a sweet and savory honey garlic sauce with colorful vegetables, effortlessly prepared in a slow cooker.


Ingredients

  • ½ cup reduced sodium soy sauce
  • ½ cup honey
  • ¼ cup ketchup
  • 2 cloves minced garlic
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground black pepper
  • 8 bone-in, skin-on chicken thighs
  • 16 ounces halved baby red potatoes
  • 16 ounces baby carrots
  • 16 ounces trimmed green beans
  • Fresh parsley for garnish


Instructions

  1. Prepare the sauce by whisking together soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and black pepper in a large bowl.
  2. Layer the chicken thighs, baby red potatoes, and baby carrots in the slow cooker.
  3. Pour the sauce over the chicken and veggies, gently tossing to coat.
  4. Cover the slow cooker and set to Low for 7-8 hours or High for 3-4 hours.
  5. In the last 30 minutes of cooking, add the trimmed green beans.
  6. For crispy chicken skin, broil the cooked thighs in the oven for 3-4 minutes.
  7. Serve the chicken with veggies and spoon the sauce over, garnishing with fresh parsley.

Notes

For a richer flavor, consider marinating the chicken in the sauce for a few hours before slow cooking. Optionally, add diced jalapeños for extra spice.
