Description
A hearty and easy slow cooker goulash made with ground beef, pasta, and a rich tomato sauce.
Ingredients
- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 3 cups bone broth or chicken broth
- 1 can crushed tomatoes (28 ounces)
- 1 cup shredded cheddar cheese
- 8 ounces elbow macaroni, cooked
Instructions
- Brown the ground beef in a skillet over medium-high heat until fully cooked. Transfer to your slow cooker.
- Add the chopped onion, bell pepper, minced garlic, broth, crushed tomatoes, Italian seasoning, salt, and pepper to the slow cooker. Stir until well combined.
- Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours (up to 8 hours for extra flavor).
- 20 minutes before serving, stir in the shredded cheddar cheese until melted, then fold in the cooked elbow macaroni.
- Serve warm with optional garnishes like fresh parsley or sour cream.
Notes
Optional: Use ground turkey or chicken instead of beef for a leaner option. Feel free to swap bell pepper for other vegetables.
