Description

A hearty and easy slow cooker goulash made with ground beef, pasta, and a rich tomato sauce.


Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 3 cups bone broth or chicken broth
  • 1 can crushed tomatoes (28 ounces)
  • 1 cup shredded cheddar cheese
  • 8 ounces elbow macaroni, cooked


Instructions

  1. Brown the ground beef in a skillet over medium-high heat until fully cooked. Transfer to your slow cooker.
  2. Add the chopped onion, bell pepper, minced garlic, broth, crushed tomatoes, Italian seasoning, salt, and pepper to the slow cooker. Stir until well combined.
  3. Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours (up to 8 hours for extra flavor).
  4. 20 minutes before serving, stir in the shredded cheddar cheese until melted, then fold in the cooked elbow macaroni.
  5. Serve warm with optional garnishes like fresh parsley or sour cream.

Notes

Optional: Use ground turkey or chicken instead of beef for a leaner option. Feel free to swap bell pepper for other vegetables.
