A simple and delicious slow cooker recipe for tender beef bites and baby potatoes drenched in garlic butter.
Ingredients
- 2 lbs beef stew meat or sirloin, cubed
- 1½ lbs baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 5 cloves garlic, finely minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Season & Combine: Toss the beef chunks with salt, pepper, onion powder, and thyme. Place them in the slow cooker along with the halved potatoes.
- Mix the Garlic Butter Sauce: In a bowl, stir together the melted butter, minced garlic, and Worcestershire sauce. Pour over the beef and potatoes.
- Slow Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the beef is fork-tender and the potatoes are soft.
- Garnish & Serve: Stir gently before serving, garnish with fresh parsley if desired, and enjoy!
Notes
Make sure to season well and don’t overcrowd the slow cooker for best results.
