Ingredients
- 1 pound ground beef
- 4 cups diced potatoes
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet ranch seasoning mix
- 1 tablespoon chili powder
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain any excess fat.
- Layer the diced potatoes at the bottom of the slow cooker.
- Add the black beans and corn on top of the potatoes.
- Layer with the canned diced tomatoes and browned beef.
- Sprinkle ranch seasoning mix and chili powder over the top.
- Gently stir the mixture with a wooden spoon.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- During the last few minutes, sprinkle shredded cheese on top and let it melt.
- Season with salt and pepper, stir gently, and serve warm.
