Description

A hearty and savory casserole cooked in a slow cooker, perfect for busy families and meal prep enthusiasts.


Ingredients

  • 1 pound ground beef
  • 4 cups diced potatoes
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet ranch seasoning mix
  • 1 tablespoon chili powder
  • 1 cup shredded cheese
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  2. Layer the diced potatoes at the bottom of the slow cooker.
  3. Add the black beans and corn on top of the potatoes.
  4. Layer with the canned diced tomatoes and browned beef.
  5. Sprinkle ranch seasoning mix and chili powder over the top.
  6. Gently stir the mixture with a wooden spoon.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  8. During the last few minutes, sprinkle shredded cheese on top and let it melt.
  9. Season with salt and pepper, stir gently, and serve warm.
