Description
A hearty and comforting one-pot dish made with ground beef, beans, corn, and topped with crispy tater tots and melted cheddar cheese, perfect for busy days.
Ingredients
- 1 pound ground beef (or ground turkey)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) diced tomatoes with green chilies, undrained
- 1 can (8 ounces) tomato sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 2 cups shredded sharp cheddar cheese
- 1 bag (30 ounces) frozen tater tots
- Fresh cilantro, chopped (for garnish, optional)
Instructions
- Brown the beef in a skillet over medium heat for 5-7 minutes until browned. Drain any excess grease.
- Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion is soft.
- Transfer the beef mixture to a slow cooker and add black beans, corn, diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Mix well.
- Layer the frozen tater tots on top of the mixture in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle shredded cheddar cheese over the tater tots and cover again.
- Once cooked, serve warm and garnish with fresh cilantro if desired.
Notes
For best results, don’t skip browning the beef and using frozen tater tots for a crispy texture.
