Description

A hearty and comforting one-pot dish made with ground beef, beans, corn, and topped with crispy tater tots and melted cheddar cheese, perfect for busy days.


Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes with green chilies, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 cups shredded sharp cheddar cheese
  • 1 bag (30 ounces) frozen tater tots
  • Fresh cilantro, chopped (for garnish, optional)


Instructions

  1. Brown the beef in a skillet over medium heat for 5-7 minutes until browned. Drain any excess grease.
  2. Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion is soft.
  3. Transfer the beef mixture to a slow cooker and add black beans, corn, diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Mix well.
  4. Layer the frozen tater tots on top of the mixture in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle shredded cheddar cheese over the tater tots and cover again.
  7. Once cooked, serve warm and garnish with fresh cilantro if desired.

Notes

For best results, don’t skip browning the beef and using frozen tater tots for a crispy texture.
