Ingredients
- 1 pound ground beef
- 4 medium potatoes, diced
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Shredded cheese (for topping)
- Sour cream (optional)
Instructions
- In a skillet, brown the ground beef over medium heat. Drain any excess fat.
- In a slow cooker, combine the browned beef with diced potatoes, kidney beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, salt, and pepper. Stir well to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- Serve hot, topped with shredded cheese and optional sour cream.
Notes
For variations, try ground turkey or plant-based meat, and add other veggies like bell peppers or zucchini for a healthier twist.
