Description

A hearty and customizable slow cooker casserole packed with flavor, designed for the lazy cook. Perfect for feeding a crowd!


Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheese (for topping)
  • Sour cream (optional)


Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. In a slow cooker, combine the browned beef with diced potatoes, kidney beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, salt, and pepper. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  4. Serve hot, topped with shredded cheese and optional sour cream.
