A hearty and comforting dish that combines tender beef, rich flavors, and creamy sour cream, all made effortlessly in a slow cooker.
Ingredients
- 1 pound sirloin steak
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon dried rosemary
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 ¼ cups beef stock
- 3 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 8 ounces white mushrooms
- ¼ cup cornstarch
- ¾ cup sour cream
Instructions
- Cut the sirloin into bite-sized pieces and toss them into the slow cooker.
- Sprinkle the seasonings over the beef and stir.
- Pour in the beef stock, Worcestershire sauce, and Dijon mustard; mix well.
- Cook on HIGH for 1 ½ hours or LOW for 3 hours.
- Add the sliced mushrooms and stir, then cook again on HIGH for an additional 1 ½ hours or LOW for 3 hours.
- Mix ¼ cup of sauce with cornstarch in a bowl, then return to the slow cooker and cook on HIGH for another 30 minutes.
- Stir in the sour cream before serving over egg noodles, rice, or mashed potatoes.
Notes
For a vegetarian version, substitute the beef with hearty vegetables and use vegetable stock.
