Description

A hearty and comforting dish that combines tender beef, rich flavors, and creamy sour cream, all made effortlessly in a slow cooker.


Ingredients

  • 1 pound sirloin steak
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 ¼ cups beef stock
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 8 ounces white mushrooms
  • ¼ cup cornstarch
  • ¾ cup sour cream


Instructions

  1. Cut the sirloin into bite-sized pieces and toss them into the slow cooker.
  2. Sprinkle the seasonings over the beef and stir.
  3. Pour in the beef stock, Worcestershire sauce, and Dijon mustard; mix well.
  4. Cook on HIGH for 1 ½ hours or LOW for 3 hours.
  5. Add the sliced mushrooms and stir, then cook again on HIGH for an additional 1 ½ hours or LOW for 3 hours.
  6. Mix ¼ cup of sauce with cornstarch in a bowl, then return to the slow cooker and cook on HIGH for another 30 minutes.
  7. Stir in the sour cream before serving over egg noodles, rice, or mashed potatoes.

Notes

For a vegetarian version, substitute the beef with hearty vegetables and use vegetable stock.
