Description

Deliciously fluffy blueberry muffins topped with a crunchy streusel for a perfect sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel topping)
  • 1/4 teaspoon ground cinnamon


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, and salt. Stir to mix.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. In a small bowl, mix brown sugar, 1/4 cup flour, and cinnamon to make the streusel topping.
  7. Fill muffin cups 2/3 full with batter and sprinkle the streusel topping over each muffin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

These muffins can be frozen for future enjoyment. Store in an airtight container for a few days.
