Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 large egg
- 1/4 cup vegetable oil
- 1 cup blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and milk, and let it sit for about 10 minutes.
- In a separate bowl, mix together flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- Add the oat mixture, egg, and vegetable oil to the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
- Let muffins cool in the tin for a few minutes before transferring to a wire rack.
