Creamy, spicy, and incredibly satisfying, Rotel Pasta Fiesta combines hearty pasta with zesty Rotel tomatoes and cheese, creating a delightful dish perfect for family dinners.
Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb ground beef or turkey
- 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tsp taco seasoning
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- Boil the pasta in salted water according to package instructions. Drain and set aside.
- In a large skillet, cook the ground beef or turkey over medium heat until fully browned. Drain any excess grease.
- Stir in the Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Add the cooked pasta to the skillet and toss to coat. Stir in the shredded cheddar cheese until melted and creamy.
- Top with fresh cilantro or parsley, if desired, and serve hot.
Notes
For a vegetarian version, substitute meat with black beans or lentils, and add veggies. For a baked version, transfer to a dish, sprinkle with cheese, and bake until bubbly.
