Ingredients
- 1 pound of fresh carrots
- 1 cup of ricotta cheese
- 1 tablespoon of olive oil
- Salt and black pepper to taste
- 2 tablespoons of honey
- 1 teaspoon of red pepper flakes
- Fresh herbs for garnish (like thyme or parsley, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots, and slice them if thick.
- Drizzle olive oil over the carrots, then season with salt and pepper.
- Toss the carrots until they are well-coated.
- Spread the carrots in a single layer on a baking sheet and roast for 20-25 minutes, turning halfway through.
- In a bowl, whip the ricotta cheese until creamy and fluffy; add a pinch of salt.
- In a saucepan, combine honey and red pepper flakes over low heat, stirring until fragrant.
- Once the carrots are done, plate the whipped ricotta, top with roasted carrots, and drizzle with hot honey.
- Garnish with fresh herbs and serve immediately.
