Ingredients
- 12 oz rigatoni
- 1 lb Italian sausage
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 diced zucchini
- 2 cups cherry tomatoes, halved
- Salt to taste
- Freshly cracked pepper to taste
- Fresh basil leaves, for garnish
- Parmesan cheese, for serving
Instructions
- Cook rigatoni in a large pot of salted boiling water until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add crumbled sausage and sauté until browned, about 5-7 minutes.
- Add minced garlic and diced zucchini to the skillet, cooking until the zucchini is tender, about 3-5 minutes.
- Stir in halved cherry tomatoes and cook until their skins soften and burst, another 3-5 minutes.
- Season with salt and freshly cracked pepper to taste.
- Toss the cooked rigatoni with the sausage and vegetable mixture until well combined.
- Serve hot, garnished with fresh basil and a sprinkle of Parmesan cheese.
