Description

Ingredients

  • 12 oz rigatoni
  • 1 lb Italian sausage
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 diced zucchini
  • 2 cups cherry tomatoes, halved
  • Salt to taste
  • Freshly cracked pepper to taste
  • Fresh basil leaves, for garnish
  • Parmesan cheese, for serving


Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add crumbled sausage and sauté until browned, about 5-7 minutes.
  3. Add minced garlic and diced zucchini to the skillet, cooking until the zucchini is tender, about 3-5 minutes.
  4. Stir in halved cherry tomatoes and cook until their skins soften and burst, another 3-5 minutes.
  5. Season with salt and freshly cracked pepper to taste.
