Fluffy and light blueberry biscuits that are easy to make and perfect for brunch or snacking.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1/2 cup cold unsalted butter, cubed
- 1 cup fresh or frozen blueberries
- 3/4 cup milk
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix together the flour, baking powder, salt, and sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the blueberries.
- Pour in the milk and stir until just combined.
- Drop spoonfuls of the batter onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For freezing, let the biscuits cool completely, then place them in an airtight container or freezer bag.
