Ingredients

  • 1 ½ pounds skinless, boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter
  • 6 minced garlic cloves
  • 1 medium onion, diced
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon garam masala
  • 1 teaspoon curry powder
  • 1 tablespoon butter (for finishing)


Instructions

  1. Marinate the chicken with salt, garlic powder, paprika, curry powder, and Greek yogurt for at least 15 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Add marinated chicken and brown for 5-7 minutes. Set aside.
  3. Add butter to the skillet, sauté garlic and onion until translucent (3-4 minutes).
  4. Pour in tomato sauce, sugar, and salt, simmer for 5 minutes.
  5. Stir in heavy cream, cayenne, garam masala, and curry powder. Simmer for 10-15 minutes.
  6. Add finishing butter, melt and incorporate into sauce.
  7. Return chicken to the skillet, heat through, and serve with naan or rice.

Notes

Ensure chicken is evenly coated with marinade for maximum flavor. Use full-fat cream for a richer sauce.
