Description

Ingredients

  • 1 beef tenderloin
  • 2 cups fresh spinach
  • 4 oz cream cheese
  • 1 cup breadcrumbs
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or rosemary)
  • Olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted.
  4. In a bowl, combine sautéed spinach, cream cheese, breadcrumbs, salt, pepper, and chopped herbs.
  5. Carefully cut a pocket into the beef tenderloin.
  6. Stuff the pocket with the spinach and cream cheese mixture.
  7. Season the outside of the tenderloin with salt and pepper.
  8. In the skillet, sear the stuffed tenderloin on all sides until browned.
  9. Transfer to a baking dish and bake for 25-30 minutes until cooked to desired doneness.
  10. Allow to rest for 10 minutes before slicing and serving.
