Ingredients
- 1 beef tenderloin
- 2 cups fresh spinach
- 4 oz cream cheese
- 1 cup breadcrumbs
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (such as thyme or rosemary)
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add fresh spinach to the skillet and cook until wilted.
- In a bowl, combine sautéed spinach, cream cheese, breadcrumbs, salt, pepper, and chopped herbs.
- Carefully cut a pocket into the beef tenderloin.
- Stuff the pocket with the spinach and cream cheese mixture.
- Season the outside of the tenderloin with salt and pepper.
- In the skillet, sear the stuffed tenderloin on all sides until browned.
- Transfer to a baking dish and bake for 25-30 minutes until cooked to desired doneness.
- Allow to rest for 10 minutes before slicing and serving.
