Description

A cozy one-pot meal that combines creamy pasta with all the hearty goodness of traditional chicken pot pie.


Ingredients

  • 8 ounces pasta (penne, rotini, or your choice)
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed veggies (peas, carrots, corn)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Biscuits or cracker crumbs for topping


Instructions

  1. Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Drain and set aside.
  2. Sauté the Basics: In a large pot, melt butter over medium heat. Add onion and sauté until translucent. Add garlic and sauté for another minute.
  3. Add the Chicken and Veggies: Stir in shredded chicken and frozen mixed veggies. Allow to mingle for a couple of minutes.
  4. Make it Soup-tastic: Pour in the chicken broth and bring to a simmer.
  5. Cream it Up: Slowly add heavy cream while stirring. Mix in thyme, salt, and pepper, and cook for another 5 minutes until slightly thickened.

Notes

For a vegetarian version, substitute chicken with more veggies and use vegetable broth instead.
