Description
A cozy one-pot meal that combines creamy pasta with all the hearty goodness of traditional chicken pot pie.
Ingredients
- 8 ounces pasta (penne, rotini, or your choice)
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed veggies (peas, carrots, corn)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Biscuits or cracker crumbs for topping
Instructions
- Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Drain and set aside.
- Sauté the Basics: In a large pot, melt butter over medium heat. Add onion and sauté until translucent. Add garlic and sauté for another minute.
- Add the Chicken and Veggies: Stir in shredded chicken and frozen mixed veggies. Allow to mingle for a couple of minutes.
- Make it Soup-tastic: Pour in the chicken broth and bring to a simmer.
- Cream it Up: Slowly add heavy cream while stirring. Mix in thyme, salt, and pepper, and cook for another 5 minutes until slightly thickened.
- Combine it All: Add cooked pasta and stir until coated with the creamy mixture.
- Serve and Enjoy: Serve with optional toppings and enjoy your cozy meal!
Notes
For a vegetarian version, substitute chicken with more veggies and use vegetable broth instead.
