Ingredients

  • 1 cup rolled oats (gluten-free if desired)
  • 2 scoops vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (or maple syrup for a vegan option)


Instructions

  1. In a large mixing bowl, combine all the listed ingredients: rolled oats, vanilla protein powder, pumpkin pie spice, almond butter, pumpkin puree, and raw honey or maple syrup.
  2. Stir the mixture until all the ingredients are well combined and form a cohesive dough. The consistency should be sticky but manageable.
  3. Using a small cookie scoop, scoop out approximately 24 small balls from the mixture.
  4. Roll each scoop between your hands to form smooth balls and place them on a plate.
  5. For optimal texture, freeze the rolled protein balls for about 10 minutes.
