Description

Delicious protein-packed muffins that are easy to make and perfect for breakfast or snacks.


Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder
  • 1 cup Greek yogurt
  • 2 ripe bananas
  • 1 cup blueberries
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a blender, combine rolled oats, protein powder, Greek yogurt, bananas, eggs, baking powder, vanilla extract, cinnamon, and salt. Blend until smooth.
  3. Gently fold in the blueberries.
  4. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool for a few minutes before transferring to a wire rack.

Notes

Avoid overfilling the muffin tin and ensure the bananas are mashed well for best results.
