Description

A delightful one-pan meal featuring tender chicken, sweet pineapple, and vibrant vegetables, perfect for any night of the week.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb cubed chicken breasts
  • 1 bell pepper, diced
  • 1 can of pineapple chunks (with juice)
  • 1/4 cup soy sauce
  • Salt and pepper, to taste
  • 1 cup rice
  • Chopped green onions, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until translucent.
  2. Add cubed chicken breasts to the skillet and cook until browned and cooked through.
  3. Stir in diced bell pepper and pineapple chunks (with juice).
  4. Pour in the soy sauce and season with salt and pepper.
  5. Let the mixture simmer for 5 minutes on low heat.
  6. While the chicken mixture simmers, cook the rice according to package instructions.
  7. Serve the pineapple chicken mixture over the cooked rice and garnish with chopped green onions.

Notes
