A delightful one-pan meal featuring tender chicken, sweet pineapple, and vibrant vegetables, perfect for any night of the week.
Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb cubed chicken breasts
- 1 bell pepper, diced
- 1 can of pineapple chunks (with juice)
- 1/4 cup soy sauce
- Salt and pepper, to taste
- 1 cup rice
- Chopped green onions, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until translucent.
- Add cubed chicken breasts to the skillet and cook until browned and cooked through.
- Stir in diced bell pepper and pineapple chunks (with juice).
- Pour in the soy sauce and season with salt and pepper.
- Let the mixture simmer for 5 minutes on low heat.
- While the chicken mixture simmers, cook the rice according to package instructions.
- Serve the pineapple chicken mixture over the cooked rice and garnish with chopped green onions.
Notes
