Description
Delicious and simple blueberry oatmeal muffins that are perfect for breakfast or a snack.
Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1/2 cup plain yogurt
- 1/4 cup honey or maple syrup
- 1/4 cup butter, melted
- 1 large egg
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and milk, letting them soak for about 15 minutes.
- In another bowl, mix yogurt, honey (or syrup), melted butter, and egg until combined.
- Add soaked oats to the wet mixture and gently stir.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Gently fold in blueberries.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before transferring to a wire rack.
Notes
Try not to crush the blueberries while folding them into the batter.
