Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 12 mini peanut butter cups, unwrapped
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat together the softened butter, peanut butter, brown sugar, and granulated sugar until creamy and light.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop about 2 tablespoons of dough, flatten it in your palm, and place a mini peanut butter cup in the center. Wrap the dough around the cup, sealing it well.
- Repeat with the remaining dough and peanut butter cups.
- Place the stuffed dough balls on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For softer cookies, do not overmix the dough and ensure butter is softened but not melted.
