Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 12 mini peanut butter cups, unwrapped


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat together the softened butter, peanut butter, brown sugar, and granulated sugar until creamy and light.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop about 2 tablespoons of dough, flatten it in your palm, and place a mini peanut butter cup in the center. Wrap the dough around the cup, sealing it well.
  7. Repeat with the remaining dough and peanut butter cups.
  8. Place the stuffed dough balls on the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are golden brown.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For softer cookies, do not overmix the dough and ensure butter is softened but not melted.
