A healthier alternative to traditional frying, this side dish of crispy Oven Fried Potatoes & Onions pairs wonderfully with any meal.
Ingredients
- 4 medium russet potatoes, cut into 1/2-inch slices
- 1 large yellow onion, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the potato slices and onions with olive oil, garlic powder, paprika, thyme, salt, and black pepper until they are evenly coated.
- Spread the potatoes and onions in an even layer on the prepared baking sheet.
- Bake for 20 minutes, then flip the potatoes and onions. Continue baking for another 15 minutes, or until they are golden and crispy.
- Remove from the oven and garnish with fresh parsley if desired. Serve immediately.
Notes
To ensure extra crispiness, soak the potato slices in water for 30 minutes before baking, then dry them thoroughly. You can also add bell peppers or carrots for extra flavor.
