- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Optional: fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
- Pat the chicken thighs dry with paper towels to ensure the skin gets crispy. Place them on the prepared baking sheet.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano to create a seasoning blend.
- Lightly brush or drizzle the olive oil over the chicken thighs.
- Liberally sprinkle the seasoning blend over each thigh, ensuring they are evenly coated on all sides.
- Bake the chicken thighs in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
- Once done, remove the chicken thighs from the oven and let them rest for 5 minutes before serving.
