Ingredients
- 1 lb smoked sausage, sliced
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the sliced smoked sausage and cook until browned.
- Add the chopped onion, bell pepper, and garlic; sauté until soft.
- Stir in the rice, paprika, salt, and pepper.
- Pour in the chicken broth and diced tomatoes, bring to a boil.
- Reduce heat, cover, and let simmer for 20-25 minutes, or until the rice is cooked.
- Fluff with a fork and serve.
