Description

A cozy and easy one pot potato soup that hugs your soul and is forgiving of culinary mishaps.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 cup almond milk or other dairy free milk
  • 1 cup shredded dairy free cheese, optional
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish


Instructions

  1. In a large pot, sauté the onions and garlic until translucent.
  2. Add the mushrooms and cook until softened and browned.
  3. Stir in the diced potatoes and vegetable broth, bring to a boil, then simmer until potatoes are tender.
  4. Mash some of the potatoes for a creamier texture but leave some chunks.
  5. Stir in almond milk and dairy free cheese, if using, until melted.
  6. Season with salt and pepper to taste and adjust thickness with more broth if needed.
  7. Serve hot, garnished with fresh herbs and a grind of black pepper.

Notes

For variations, swap almond milk with any unsweetened plant milk or add different veggies.
