Description

A creamy, slightly spicy, one-pot pasta dish that is simple to make and perfect for a quick weeknight dinner.


Ingredients

  • 1 (13 oz) pack of cajun andouille sausage (cut into coins)
  • 1 tbsp chopped garlic
  • 1 (14.5 oz) can chicken broth
  • ½ cup heavy cream
  • 1 (10 oz) can Rotel diced tomatoes and chilies
  • 8 ounces dry bowtie pasta
  • 2 cups shredded cheddar cheese
  • 1 tsp cajun seasoning


Instructions

  1. In a large skillet, cook the sausage over medium heat for about 5 minutes or until browned.
  2. Remove the sausage from the pan and set aside.
  3. In the same skillet, sauté the garlic in the leftover sausage grease for about a minute.
  4. Pour in the chicken broth, diced tomatoes, heavy cream, and cajun seasoning, stirring to combine.
  5. Add dry pasta, cover, and let it simmer on LOW for about 14 minutes.
  6. Once pasta is cooked, stir in the cooked sausage and shredded cheddar cheese until melted.
  7. Serve and enjoy!

Notes

You can use other types of sausage or pasta shapes if desired. Adjust the spice levels according to your taste.
