Ingredients

  • 4 chicken thighs or breasts
  • 1 cup rice (white or brown)
  • 2 cups chicken broth or water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas and carrots)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the rice, chicken broth, chopped onion, minced garlic, mixed vegetables, paprika, salt, and pepper.
