Ingredients
- 4 chicken thighs or breasts
- 1 cup rice (white or brown)
- 2 cups chicken broth or water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas and carrots)
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the rice, chicken broth, chopped onion, minced garlic, mixed vegetables, paprika, salt, and pepper.
- Place the chicken on top of the rice mixture and drizzle with olive oil.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
- Let it rest for a few minutes before serving.
