Description

A comforting one-pan dinner that marries tender chicken with pasta and vibrant veggies in a tangy balsamic glaze.


Ingredients

  • 2 chicken breasts
  • 2 cups chicken broth
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1/2 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper and add to the skillet.
  3. Cook chicken for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
  4. Add orzo pasta to the skillet and toast for 1-2 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Lower heat and let orzo simmer for 8-10 minutes until al dente, stirring occasionally.
  7. Stir in cherry tomatoes, spinach, and balsamic vinegar.
  8. Return chicken to the skillet and heat through.
  9. Serve warm, topped with grated Parmesan cheese if desired.
