Ingredients
- 2 chicken breasts
- 2 cups chicken broth
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1/2 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper and add to the skillet.
- Cook chicken for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
- Add orzo pasta to the skillet and toast for 1-2 minutes.
- Pour in chicken broth and bring to a boil.
- Lower heat and let orzo simmer for 8-10 minutes until al dente, stirring occasionally.
- Stir in cherry tomatoes, spinach, and balsamic vinegar.
- Return chicken to the skillet and heat through.
- Serve warm, topped with grated Parmesan cheese if desired.
