Description

A classic comfort food dish with tender beef, earthy mushrooms, and a creamy sauce served over egg noodles.


Ingredients

  • 8 oz egg noodles
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 lb thinly sliced beef (sirloin or tenderloin)
  • Salt and pepper to taste
  • 1 tablespoon butter (for sautéing vegetables)
  • 1 onion, chopped
  • 8 oz mushrooms, sliced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • 1 cup sour cream
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the egg noodles in salted boiling water until al dente. Drain and drizzle with olive oil.
  2. Heat olive oil and butter in a skillet over medium-high heat. Brown the beef in batches, seasoning with salt and pepper, about 2-3 minutes per side. Remove and set aside.
  3. In the same skillet, add butter, onion, and mushrooms; sauté for 5-7 minutes until softened.
  4. Sprinkle flour over vegetables and stir for 1 minute. Gradually add beef broth while stirring until smooth. Add Worcestershire sauce and mustard, bring to a simmer for 5 minutes.
  5. Return beef to the skillet, simmer for 5-7 minutes.
  6. Remove from heat and stir in sour cream. Adjust seasoning as necessary.
  7. Serve over egg noodles and garnish with parsley.

Notes

For added flavor, consider using a mix of mushrooms or adding bell peppers during the sautéing stage.
