Ingredients
- 1 lb beef sirloin or tenderloin, thinly sliced
- 8 oz fresh button mushrooms, sliced
- 1 medium yellow onion, sliced
- 2 garlic cloves, minced
- Fresh parsley, chopped (optional, for garnish)
- 2 cups beef broth
- 1 tablespoon Dijon mustard
- 1 cup sour cream
- 2 tablespoons all-purpose flour (or gluten-free flour)
- 2 tablespoons butter (or olive oil for dairy-free option)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
Instructions
- Cut the beef into thin strips against the grain for tenderness. Season with salt and pepper and lightly dredge with flour.
- In a large skillet, heat butter and olive oil over medium heat. Add sliced mushrooms and onions, cooking until soft and golden brown.
- Push mushrooms and onions to the sides, add beef strips to the center, and sear until browned but not overcooked.
- Stir in minced garlic, then add beef broth and Dijon mustard. Let sauce simmer gently.
- Remove from heat and stir in sour cream until creamy. Season with salt and pepper to taste.
- Serve immediately over buttered egg noodles, mashed potatoes, or steamed rice.
