Description

A classic, comforting dish featuring creamy beef and mushrooms served over noodles or rice.


Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 8 oz fresh button mushrooms, sliced
  • 1 medium yellow onion, sliced
  • 2 garlic cloves, minced
  • Fresh parsley, chopped (optional, for garnish)
  • 2 cups beef broth
  • 1 tablespoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Slice the beef into thin strips against the grain.
  2. Season with salt and pepper and lightly dredge with flour.
  3. In a large skillet, heat butter and olive oil over medium heat.
  4. Add mushrooms and onions, cooking until soft and golden brown.
  5. Push the veggies to the side and add beef strips to sear until browned.
  6. Add minced garlic and stir until fragrant.
  7. Pour in beef broth and mix in Dijon mustard; let simmer gently.
  8. Remove from heat and stir in sour cream until creamy.
  9. Serve over buttered egg noodles, mashed potatoes, or steamed rice, garnished with parsley if desired.

Notes

Avoid boiling after adding sour cream to prevent curdling. This dish pairs well with noodles, potatoes, or a salad.
