Description

Ingredients

  • 8 oz pasta (fettuccine or egg noodles)
  • 1 lb mushrooms (sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup sour cream
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley (for garnish)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until softened.
  3. Add the sliced mushrooms and minced garlic, cooking until the mushrooms are browned and tender.
  4. Stir in the vegetable broth and paprika; let it simmer for a few minutes.

  6. Add the cooked pasta to the skillet, mixing until the pasta is coated with the creamy sauce.
