Ingredients
- 8 oz pasta (fettuccine or egg noodles)
- 1 lb mushrooms (sliced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 cup sour cream
- 2 tbsp olive oil
- 1 cup vegetable broth
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until softened.
- Add the sliced mushrooms and minced garlic, cooking until the mushrooms are browned and tender.
- Stir in the vegetable broth and paprika; let it simmer for a few minutes.
- Reduce the heat and stir in the sour cream until well combined.
- Add the cooked pasta to the skillet, mixing until the pasta is coated with the creamy sauce.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
