Description

A heartwarming Tuscan chicken soup with tender chicken, cream, and vibrant greens, delivering comfort in every bowl.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Grated Parmesan cheese for serving


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5 minutes.
  2. Add minced garlic and cook for 1 more minute.
  3. Add chicken breasts, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper; bring to a boil, then lower heat and simmer for 15-20 minutes.
  4. Remove chicken, shred it, and return it to the pot.
  5. Stir in heavy cream and spinach until the spinach wilts. Serve with grated Parmesan.
