Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 1 cup heavy cream
- 2 cups fresh spinach
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5 minutes.
- Add minced garlic and cook for 1 more minute.
- Add chicken breasts, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper; bring to a boil, then lower heat and simmer for 15-20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Stir in heavy cream and spinach until the spinach wilts. Serve with grated Parmesan.
