Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 teaspoon dried Italian herbs
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken breasts and cook until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.
- Add minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in diced tomatoes, heavy cream, and Italian herbs; bring to a simmer.
- Return the chicken to the skillet, cover, and cook for 10 minutes until the chicken is cooked through.
- Stir in Parmesan cheese and allow the sauce to thicken.
- Garnish with fresh basil before serving.
