Description

A delicious and satisfying casserole that combines beef, veggies, and melty cheese, all in a low carb dish.


Ingredients

  • 2 lbs ground beef (80/20 fat ratio preferred)
  • 1 large onion (diced)
  • 2 large bell peppers (green, red, or mixed)
  • 2 cloves garlic (minced)
  • 8 oz cream cheese (softened to room temperature)
  • 2 tbsp Worcestershire sauce
  • Salt and pepper (to taste)
  • 8 oz provolone cheese (sliced)
  • 1.5 cups mozzarella cheese (shredded)
  • 1 tbsp olive oil


Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13 baking dish with non-stick spray.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced onions and bell peppers, cooking for 5-6 minutes until softened.
  4. Add minced garlic and cook for another 30 seconds.
  5. Add ground beef, breaking it up, and season with salt and pepper, cooking for 7-8 minutes until browned.
  6. Stir in Worcestershire sauce and mix well.
  7. Reduce heat to low and add softened cream cheese, stirring until melted.
  8. Transfer the meat mixture to the baking dish, spreading it evenly.
  9. Layer torn provolone over the meat and top with shredded mozzarella.
  10. Bake for 22-25 minutes until cheese is melty and golden.
  11. Let rest for 5 minutes before serving.

Notes

Use ground turkey or chicken as a lighter alternative; feel free to add more veggies or switch up the cheese.
