Description

A warm, creamy bowl of cheesy loaded potato soup that is easy to make and perfect for chilly nights.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, sauté the onions until translucent, about 3-5 minutes.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. Blend the soup until smooth or leave it chunky based on preference.
  4. Stir in the heavy cream, cheddar cheese, and sour cream.
  5. Season with salt and pepper to taste, then heat through.
  6. Serve garnished with green onions.

Notes

This soup can be customized with additional toppings like bacon or jalapeños. It can also be stored in the fridge for 3-4 days or frozen, but the texture may change upon reheating.
