Ingredients
- 4 large potatoes, peeled and diced
- 1/2 cup onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, sauté the onions until translucent, about 3-5 minutes.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Blend the soup until smooth or leave it chunky based on preference.
- Stir in the heavy cream, cheddar cheese, and sour cream.
- Season with salt and pepper to taste, then heat through.
- Serve garnished with green onions.
Notes
