Description

A warm and creamy loaded potato soup that’s perfect for cozy nights, topped with bacon and cheese.


Ingredients

  • 4 large potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup bacon, cooked and crumbled
  • Salt and pepper to taste
  • Green onions, chopped for garnish


Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add cubed potatoes and chicken broth; bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Mash some of the potatoes for a thicker texture.
  5. Stir in heavy cream, salt, and pepper.
  6. Add cheese and mix until melted.
  7. Serve hot, topped with bacon and green onions.
