Description

A healthier twist on the classic Beef Stroganoff, featuring lean beef and Greek yogurt for creaminess without the heaviness.


Ingredients

  • 1 lb beef (strips)
  • 8 oz mushrooms (sliced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups beef broth
  • 1 cup Greek yogurt or sour cream
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • 8 oz egg noodles
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the beef strips and sear until browned.
  2. Remove beef and set aside.
  3. In the same skillet, add onions and garlic, cooking until softened. Add mushrooms and cook until browned.
  4. Stir in flour and cook for 1 minute, then slowly add beef broth, stirring until thickened.
  5. Return the beef to the skillet and add Worcestershire sauce, cooking until heated through.
  6. Remove from heat and stir in Greek yogurt or sour cream.
  7. Serve over cooked egg noodles and season with salt and pepper to taste.

Notes

For extra flavor, consider adding a splash of red wine to the sauce.
