Description
A healthier twist on the classic Beef Stroganoff, featuring lean beef and Greek yogurt for creaminess without the heaviness.
Ingredients
- 1 lb beef (strips)
- 8 oz mushrooms (sliced)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 2 cups beef broth
- 1 cup Greek yogurt or sour cream
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- 8 oz egg noodles
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Add the beef strips and sear until browned.
- Remove beef and set aside.
- In the same skillet, add onions and garlic, cooking until softened. Add mushrooms and cook until browned.
- Stir in flour and cook for 1 minute, then slowly add beef broth, stirring until thickened.
- Return the beef to the skillet and add Worcestershire sauce, cooking until heated through.
- Remove from heat and stir in Greek yogurt or sour cream.
- Serve over cooked egg noodles and season with salt and pepper to taste.
Notes
For extra flavor, consider adding a splash of red wine to the sauce.
